Bang Bang Shrimp Tacos Recipe

This recipe is perfect after a long day of training. It uses a lot of healthy ingredients, but it is also very filling. If you are looking for a healthier option, sauté the shrimp without the breading it.


Ingredients:

- 12 corn tortillas
- 1/3 cup chopped cilantro

Pico de Gallo:
- 1 large tomato
- 1/2 small yellow or red onion diced
- 2 tablespoons finely chopped cilantro
- 1 tablespoon of lime juice
- 1/2 teaspoon of salt

Coleslaw:
- 1 package pre-chopped cabbage mix
- 2 tablespoons of vinegar
- 1 tablespoon of white sugar
- 1 teaspoon of canola oil
- 1/2 teaspoon of celery salt
- 1/4 teaspoon of pepper

Bang Bang Shrimp:
- 2-3 tablespoons of olive oil for frying
- 50 shrimp
- 2 cups flour
- 2 eggs
- 1/4 cup light mayo
- 1/4 cup sweet chili sauce
- 1 tablespoon of Sriracha
- salt (to taste)

Instructions:

1. Mix together coleslaw and make your Pico de Gallo.

2. Mix light mayo, sweet chili sauce and sriracha together. Set aside as the Bang Bang sauce. Heat olive oil in a large frying pan over med-high heat.

3. Toss shrimp in egg, then coat in flour. Fry for 2-3 min per side until crispy. Remove shrimp and let drain on a paper towel lined plate. Toss in Bang Bang sauce until well-coated.

4. Pan fry corn tortillas for 30 seconds until soft.

5. Add coleslaw to corn tortillas. Then add shrimp and Pico de Gallo. Serve with guacamole if desired.
