Eggs & Kraut Recipe

Eggs and sauerkraut are a magical combo with a protein + probiotic boost! Plus a strip of bacon to really send this breakfast over the top. I enjoyed this breakfast after a Sunday long run, did I mention it pairs perfectly with a mimosa? Depending on where you are at in your training cycle, you may want to include more carbohydrate than I did here. I also might suggest a slice of toast or two, a cup of sweet or white potatoes or a cup of fruit to provide additional carbohydrates needed for replenishing glycogen stores and prepping for your next workout!


- 2 eggs
- 6 cherry tomatoes
- 1/2 cup fresh spinach
- 1/4 cup of sauerkraut
- 2 tbsp olive oil
- 1 thick cut slice of bacon
- Sprinkle of everything bagel seasoning


1. Pre-heat oven to 425 and place bacon on cookie sheet covered in foil. Then place cookie sheet in oven for 10-15 minutes depending on how crispy you like your bacon. :)

2. Add 1 tbsp of olive oil to pan and let heat.

3. Add cherry tomatoes, spinach and sauerkraut to heated pan and cook for 3-5 minutes.

4. Place eggs, bacon and pan of tomatoes, spinach and kraut on one plate. Sprinkle with everything bagel seasoning and devour!
