Eggcellent Muffins Recipe

“By failing to prepare, you are preparing to fail.” —Benjamin Franklin. This is for those of you who are tired of plain hard boiled eggs for breakfast or wasting time in the morning waiting to purchase your favorite breakfast sandwich. To make five breakfast sandwiches it cost me roughly $7.50 (in Hawaii where groceries are more expensive too!). One single breakfast sandwich on your way to work costs $3-5 and I would say that these Eggcellent Muffins are much more filling and a great balance of carb, fat, and protein! Plan ahead, save money and be creative!


-5 English muffins
-10 eggs
-1 cup fresh spinach
- 5 slices of cheese (I chose pepper jack)
-5 slices of meat (I picked ham)
-1 tbsp oil


1. Toast muffin to your liking.
2. Meanwhile, heat pan to medium high with 1tbsp of oil for two eggs. I used a two egg pan but you can also use a mason jar lid that you spray, butter or oil well to create your perfect egg patty.
3. Add cheese to toasted English muffin, top with choice seasoning and a cooked egg patty.
4. Heat choice of meat in egg skillet.
6. Top English muffin with spinach and meat and the top side of the muffin.
7. Let cool for 3-5 minutes then wrap in paper towel and store in a container in the refrigerator.
8. When ready to consume, reheat in the paper towel for 1-2 minutes and enjoy the taste of planning ahead, saving money and your Eggcellent Muffin.
