Zucchini Chocolate-Chip Muffins Recipe

Yes, zucchini and chocolate all in one muffin. Some days I forget to get enough vegetables (oops), these muffins are perfect for sneaking in more green into your diet. I must admit, the dark chocolate really takes these muffins to a whole new level of tasty. Two of these muffins makes for a great pre-morning run snack or even dessert! I brought these for an office party snack and they were devoured with minutes, I can not wait for you to taste them.


- 1 large zucchini grated (1 1/2 cups)
- 1 1/2 cup of Oats (GF if needed)
- 2 teaspoon ground cinnamon
- 1 large egg
- 1/4 cup coconut oil
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1/4 cup dark chocolate chips
- 1/4 cup walnuts
- Cooking spray
- Muffin cups


1. Preheat oven to 350F and spray muffin liners.
2. Grate zucchini. Place in colander and press out moisture with a paper towel.
3. Blend oats to create flour consistency. Then add the blended oats, cinnamon, and baking powder into a bowl and stir.
4. In a different mixing bowl add egg, applesauce, coconut oil, honey, and drained zucchini then, stir.
5. Stir in dry ingredients to wet ingredients. Then stir in chocolate chips and walnuts.
6. Cover muffin pan with foil and bake for 12 minutes.
7. Uncover and bake for 8 minutes.
8. Once done let muffins completely cool. Refrigerate and enjoy for the next 5 days. I enjoy the muffins more cold out of the refrigerator!
