The Best Salad Ever Recipe

This week we are bringing you The Best Salad Ever and with that a reminder that salad does not have to be boring! This meatless meal is perfect for spring and summer time, and a favorite that I often bring to potlucks and summer BBQ's. The combination of a unique grain like black rice adds to the color, texture, and light flavor of this salad.


- 1 cup black rice or quinoa
- 3 cups (5 oz) of baby kale
- 12 oz (4 cups) of Broccoli Coleslaw with broccoli, carrots and red cabbage
- 1-2 mangos
- 2 cans of chickpeas
- 1 cup dried cranberries
- 1 cup roasted sunflower seeds
- 1 large cucumber diced
- 2 small Roma tomatoes diced
- 1 avocado sliced
- 1 small can of chopped olives (4.25oz)
- Choice dressing: My favorite is Brianna's Creamy Balsamic


1. Follow the recipe on the bag to cook your chosen grain. Once complete, refrigerate the cooked grain.
2. Rinse canned chickpeas in a strainer. Strain any remaining liquid.
3. Once grains are completely cooled add all ingredients into a large bowl and toss.
4. Add dressing and toss some more and enjoy!
