Magical Green Papaya Salad Recipe

I was finally able to save money and make one of my favorite Thai dishes come to life. I bring you a tasty green papaya salad. Green papaya, as used in this recipe, is unripe papaya. These dark green gems can often be found at Asian markets and sometimes even your local supermarket. Make sure that the papaya you choose is VERY firm and a dark green. The unripe papaya has a jicama texture and an incredible flavor you will have to experience for yourself!


Ingredients:

- 1/2 large green papaya or 1 whole med-small green papaya
- 1 carrot shredded
- 1/4 cup of shredded red cabbage
- a sprinkle of green onion
- 1/4 cup of macadamia nuts or peanuts
- 3-5 cherry tomatoes
- a sprinkle red pepper flakes on top

Sauce:
- 1 large clove of garlic minced
- 3 tbsp lime juice
- 2 tbsp agave
- 1 tsp fish sauce
- 1/2 fresh red Thai chili thinly sliced or substitute using red chili flakes

Instructions:

1. Peel the green skin of the papaya. Then use a julienne peeler to get papaya shreds. If you do not have a peeler you can watch this video for other methods but PLEASE do not cut your hands.
2. Combine minced garlic, lime juice agave, fish sauce, and red Thai chili and mix together.
3. Combine the dressing and papaya salad and mix.
4. Top salad with shredded carrots and red cabbage. Add tomatoes and sprinkle green onion.
5. Top with macadamia nuts or peanuts and a sprinkle of red pepper flakes and enjoy!
**This recipe is suitable for one large serving if you wish to feed more I recommend doubling or tripling the recipe! :)
