Pumpkin Hummus Recipe

I love spreading this hummus on quesadillas for extra protein and dipping my veggies in this fall-themed hummus. For a lazy version, buy your favorite store made hummus and mix in pureed pumpkin. Although I must confess, homemade hummus is tastier!


Ingredients:

15-ounce can chickpeas
3/4 cup pumpkin puree
Sprinkle of cayenne
1 tablespoons fresh lemon juice
1 teaspoon honey
1 tbsp tahini
1 garlic glove
1 tablespoon olive oil
Pumpkin seeds for topping

Instructions:

1. Rinse canned beans and add to a food processor.
2. Combine beans, garlic, tahini, lemon juice in the food processor and blend until smooth.
3. Then add olive oil and continue to blend.
4. Add honey, pumpkin and a sprinkle of cayenne pepper.
5. Blend and taste. Adjust texture and seasoning as needed.
6. Top with pumpkin seeds. This hummus tastes best chilled!
